Greg helps with the beverage programs at Cipollina, Swoop House, Sawyer & Co., Swoop Wine, 2 dine 4 Hospitality, & JT Youngblood’s, in Austin.

With more than 24 years in the industry, Greg has been Beverage Director/Buyer/Consultant with many restaurants, retailers, hotels, bars, and night clubs (e.g., Jeffrey’s, Josephine House, Hot Tomato’s, Spice Merchant, Radisson, including one and two glass Wine Spectator Awards winners).

He has regularly participated as a wine and spirits judge for various competitions and tasting panels, including the Dallas Morning News and TEXSOM International Wine Competition, the Whiskies of the World Competition, Sommelier Journal, and Fiona Beckett’s Matching Food & Wine. He has participated on panels for Master of Wine dissertations, has been a tasting coach for a Master Sommelier Candidate, has graduated from many regional wine and spirit immersion programs, and was on the Grapes for Humanity Global Committee. He has been consultant to the Royal Netherlands Embassy in Washington DC, on the Restaurant Exploratory Board, and has been on the Fearless Critic Restaurant Guide Council.

Greg consults with private collectors, restaurateurs, retailers, wholesalers, caterers, and corporate clients, in the worlds of taste, investment, marketing, merchandising, sales, service, education, and sensory perception. He is a Certified Wine Educator (CWE), Certified Specialist of Spirits (CSS), and hosts and coordinates many annual tastings, events, and festivals. Greg is also a silent partner and investor in various projects.
